Thanks for the info! This is very interesting indeed. Over the last few years I’ve become a big fan of roasted beets (as a side dish, in a salad). As a cyclist, I train hard, but have less motivation and discipline on the nutrition side. I just picked an enormous amount of beets from the garden and was worried the sugars would negate health benefits, in such large quantity. Which is why I asked the question. I had no idea about the performance benefit as well.
